We honour the age-old art of producing authentic black tea. This natural process begins as ‘two leaves and a bud’ are hand picked from the lush terraced hills, before undergoing a multifaceted journey. Once picked, the leaves enter a process known as withering, which removes excess moisture. This is where the tea derives its deep colour, flavour and distinct aroma. Once withered, the leaves are rolled, twisted and parted which serves as a catalyst for the enzymes in the leaves to react with the oxygen in the air. After rolling, the leaves are left to ferment before fired to preserve their intricate flavour, as it transforms to the black tea we have grown to know and love.
